Les grandes eaux nocturnes, Versailles

During the summer, ore opens to the public every Saturday evening. A good opportunity to walk after dinner in the gardens of the Château de Versailles and to enjoy the sumptuous fireworks that are fired there.

The menu has been specially designed by the chef. A very summery dish to start: a tomato-watermelon ice soup with a nice basil condiment to bring color and pep to the roundness of the tomato and watermelon. The dinner continues with a cod à la meunière, that is to say with hazelnut butter and lemon deglaze, with sautéed zucchini spaghetti and thin slices of crispy fresh onions. Then comes the shoulder of lamb, which has been gently candied for two days and then roasted at the last minute, accompanied by artichokes and a parsley condiment.

Finally, two emblematic products of the season, strawberries and rhubarb, make up a very gourmet dessert with the complicity of an almond cream and a fresh herb sorbet from La Manufacture de Glace Alain Ducasse.

For the greatest pleasure of wine lovers, this dinner can be served with a wine and food pairing: a glass of Moët & Chandon Brut Impérial, followed by a Mâcon-Buissières les Clos for the cod and a Puguin-Saint-Emilion for the lamb.
